Treats! Frozen Lemonade Pie!

For Thanksgiving it was my job to bring dessert.  I thought "Great - make a quick pie at home, grab a pumpkin pie somewhere and I'm done!"

Except I was informed that the pumpkin pie was done already so I just needed to bring something else.  Well great.  While I do like to make new things, I didn't really have a whole lot of time to come up with something.  I knew I was going to make the No Bake Cheesecake that is wonderful because it's so easy.  So what would be the other pie?

Of course, I looked to Pinterest.  I typed in the words "Easy Pie" and Pinterest did the rest.  I saw Easy Lemonade Pie and was intrigued.  I repinned and delved deeper.  According to the site it came from: Sticky Gooey Creamy Chewy, this is an easy task.  Done!

Of course I left this to the very last minute - I went to the grocery store the night before Thanksgiving - which feels a little like Black Friday with the crowds and the craziness.  I got what I was looking for and after a night out with the Husband, I came home and threw the cheesecake and Pie together.

And it really was that easy.

Here's how I did it:


1.  Graham Cracker Pie Crust.  I bought this because I rarely make things from scratch.  2.  Sweetened Condensed Milk.  3.  Frozen Lemonade Concentrate.  I used Pink Lemonade because I love Pink Lemonade.  4.  A tub of Cool Whip.  Seriously - that's all you need.

To begin:


Gently fold the cool whip and sweetened condensed milk together.

Once that's done, fold in the Lemonade Concentrate:
You can't tell it's in there, but it is.

Once you're done with that, pour it into the crust:

Once that's poured into the crust, cover it.

Then stick it in the freezer overnight.  I suggest keeping it in the freezer until it's ready to be served.  Since this traveled to my Grandparents house, the minute I got there, it went straight into their freezer until serving time.

Why?  Because this pie melts...fast!  And you might think that you don't want it to be too frozen to eat, that won't happen.  You want it as frozen as possible because the ingredients just don't freeze the way you think they would.  Things stay pretty creamy, even straight out of the freezer.  


Now I realize this isn't the prettiest slice of pie you've ever seen, but it is a left over that I brought home.  I thought about bringing my camera to take a picture of it at Thanksgiving but usually people think you're strange if you begin taking pictures of the food.

I literally just ate that piece.  It was delicious and tart.  This would be perfect for summer too.


So that's how it was done.  It was a hit at Thanksgiving and I need to really throw it away before I eat the 4-5 pieces left.  But its really tasty so that might be tough.
